Zucchini chips


Sometimes you come across a recipe that surprises you. This is one of those. I made these with my girls, as this seems to make them both a little braver when it comes to trying the final result. Really recipes don’t come much easier than this (well there is this great coconut biscuit recipe and these amazing pancakes that might beat these chips in the easy stakes). 

When these were ready to eat we all loved them, even my fussy youngest. I was busy making plans in my head about serving these at dinner and birthday parties, I didn’t even think about future kids dinners. I was very excited about these. Both adult and kids would love these. I also think they look rather attractive as well, so they are perfect for social gatherings. You do need to eat them straight away, before they get all soggy. Preparation time
5 minutes

Cooking time
25-30 minutes

Ingredients
1/4 cup dry breadcrumbs 
1/4 cup fresh parmesan cheese, grated 
tiny pinch garlic powder 
2+1/2 cups sliced zucchini (2 small) 
1 egg 
spray oil

Method
  1. Preheat oven to 180°C.
  2. Combine dry ingredients together in a medium-size bowl. In a shallow bowl, whisk the egg. Dip zucchini slices in egg, and toss in breadcrumb mixture. 
  3. Place coated slices on an ovenproof wire rack coated with cooking spray; place rack on a baking sheet. Bake at 180°C for 30 minutes or until browned and crisp. Serve immediately, as a side or a snack. Serves 4

Fresh Woolworths tip: You can experiment with carrots and sweet potatoes as an alternative to zucchini – or serve up a basket of various veggie chips.
