Yay, we made it to the
other side. Yep, we have just moved. Slowly things are starting to feel normal.
The main inconvenience at the moment is the loss of a stovetop. Our gas isn’t
working at the moment. It’s been a bigger struggle than I realised. How am I
supposed to cook our pasta? Well I have learnt that you can do it in the
microwave, who knew?!
This last week has
been horrendous, I’ve feel as though I have been cleaning and packing for
months now. Throw in my pregnancy and the two little ones and it’s all made me
feel a little tried and lazy. I sadly have to admit that I have done things
this week that I never thought I would do. I’ve been to the ‘golden arches not
once but twice’ in one week (I blame the girls as they fell asleep in the car,
so I didn’t want to wake them so I took the drive thru option). I’ve served up
frozen pies and pizzas for dinners but the thing that upsets me the most is
that not only did I buy, but I also cooked a packet cake mix. Oh the shame.
Worst of all was the comment that miss F made “ Mum is this is the best cake
that you have ever made”. I have to admit that there were tears from me at this
point.
Tomorrow I will get us
back on track and will hit the supermarket and will do a massive shop. It’s
back to normal life. As the stovetop doesn’t work I plan on using my slow
cooker. I’ve only used it once and that was when my morning sickness was just
kicking in, so I don’t have the fondest memories. Once again, tomorrow I will
change this. Whilst I’m making all these promises about tomorrow, perhaps I
should also throw in the normal ‘my diet starts tomorrow’ whilst I’m at it!
On another note,
here’s a little something that I made before all the chaos began. Tuna and corn
patties. I made up a bundle and gave a couple to some friends, and they seemed
to be a hit with both young and old.

Preparation time

Cooking time
25 minutes
Ingredients
450g potatoes, peeled and cut into chunks
2 tbs reduced-fat mayonnaise
190g can tuna in springwater, drained
1 cup sweetcorn, drained
a sprig of fresh parsley, finely chopped
1/4 cup tasty cheese, grated
1 egg yolk
spray oil
50g wholemeal breadcrumbs
Method
- Boil the potatoes for 10-12 minutes, or until tender. Drain and mash with the mayonnaise and set aside to cool.
- When cool add the tuna, sweetcorn and parsley, cheese and egg yolk and mix well. Divide the mixture into 6 equal portions and form into fish cakes about 1-inch thick.
- Press each patty lightly into the breadcrumbs. Place on a baking sheet lined with baking paper. Lightly spray with spray oil and bake for 20-25 minutes, until golden, turning halfway through. Serve with your toddler’s favourite raw veggies or salad. Serves 6
